Yeap! These biscuits are amazingly aromatic and crunchy! They combine orange juice and zest and a warm hint of cinnamon and clove to make irresistible goodies, perfect for your coffee or tea!

Serves: 40-50 pieces Preparation time: 20′ Cooks in: 50′ Ready in: 1:10′

Ingredients
1 water glass extra-virgin olive oil
¾ water glass sugar
1 water glass fresh orange juice
1 orange, zested
1 tsp baking soda
1 tsp baking powder sifted
1 kg all purpose flour sifted
1 tbsp cinnamon powder
1 tsp cloves powder

Method
Step 1
Preheat oven at 180oC and line a shallow baking dish with baking parchment. In a stand mixer attach beater and beat oil and sugar for 5 minutes. Then add spices and orange zest.

Step 2
Dissolve baking soda in orange juice. Replace the beater with the dough hook and add orange juice and flour alternating ingredients until you get a smooth medium dough that pulls away from the sides of the bowl. You might not need to use all the flour. Knead on a clean, dusted with flour surface for a couple of minutes.

Step 3
Divide dough in 3 pieces and roll them in a long cylinder. Transfer in the baking dish and carve 12-14 slices (1 cm thick) on each cylinder dough but not all the way down. Bake for 20-25 minutes. Allow to cool out of the oven for 5 minutes.

Step 4
With a sharp knife cut the slices all the way down. Place the single biscuits on the baking dish and bake for another 5-10 minutes at 150οC until nicely colored and very crispy. Allow to cool completely before storing in an air-tight box.
