Ingredients
8 burger buns
1½ kgr beef, in 3cm chunks
150gr kefalograviera cheese (or other hard salty cheese), diced
1 onion finely chopped
1 garlic clove finely chopped
1½ cup ripe tomatoes, peeled, finely chopped
½ cup red wine
1 cinnamon stick
⅓ cup extra-virgin olive oil
salt, freshly ground black pepper
Method
Step 1
Place a large sauté pan over medium-high heat. Heat oil and cook onion and garlic until fragrant. Add beef and cook for 3–4 minutes, turning frequently, until evenly browned. Pour in wine and wait until absorbed. Stir in tomato, cinnamon, salt and pepper. Simmer for 1 hour or until beef is tender and sauce thickened. Remove pan from heat and let cool for a while before you stir in the cheese.
Step 2
Preheat oven to 180C. Take each bun and cut a 1,5cm thick “cap”. Remove some of the inner soft white part of the bottom part of the buns. Divide beef – cheese mix in the buns and cover with their “caps”.
Step 3
Cover each bun with baking parchment and place on a baking pan. Bake for 30-40 and serve with French fries and salad.
