This is the winter version of a summer recipe called “kagianas“, that is eggs with fresh tomato sauce in the pan, plus feta cheese if you wish.

6-8 eggs
150 g sausage of your choice, sliced
250 g feta cheese, crumbled
extra-virgin olive oil
1 tbsp spring onion, chopped


Step 1
Cook sausage in a non-stick pan on medium heat until nicely browned on all sides and cooked through. Keep warm.

Step 2
In the same pan heat 1 tbsp oil and cook feta cheese for 2-3΄ stirring occasionally.

Step 3
In a bowl beat eggs with a fork and pour in the pan, stirring at all times until cooked. Sprinkle with pepper, garnish with sausage, spring onion or chives and serve warm with crusty bread.
