A savory-meets-sweet appetizer…

Ingredients
sourdough bread, 1 loaf cut in slices, toasted
200 gr soft cheese Katiki Domokou* or other soft cheese
6 figs washed, dry
1/3 cup Samos sweet wine or other sweet wine
rosemary, 1 small sprig
Method
Step 1
Heat a non-sticking pan and add the figs. After releasing their juices, turn them over and cook until all juices evaporate.
Step 2
Pour the wine and add the rosemary sprig. Reduce heat and simmer until figs are tender but not melted. Discard rosemary and remove from heat; cool to room temperature. Slice figs once cooled.
Step 3
Top each toasted bread slice with cheese and arrange fig slices on top. Drizzle with any juices from the pan and serve immediately.
