Stingray is a really unique firm white fish and very tasty! It makes a beautiful weekday meal for the whole family if you add potatoes in the baking dish!

Ingredients
1 kg stingray slice, in portions
1 kg potatoes, sliced
1 cup extra-virgin olive oil
6 garlic cloves (or less), chopped
1 bunch parsley, chopped
½ cup lemon juice
salt, pepper
Method
Step 1
Preheat oven at 200οC/fan. Whizz garlic, parsley and half oil to a paste.
Step 2
In a bowl mix potatoes with a little oil and season with salt and pepper. Bake in a baking dish for 35 minutes.
Step 3
Add stingray portions on top of potatoes, drizzle all ingredients with garlicky oil, lemon juice and remaining oil and bake for another 15 minutes. Serve warm with a nice green salad.
