This Mediterranean side dish is absolutely delicious! It features the national cheese of Greece – feta, along with tomatoes and summer herbs enclosed in baking parchment! Feel free to indulge with crusty bread on the side!

Serves: 3-4 Prep. time: 10′ Cooks in: 20′ Ready in: 30′

200 g pack feta cheese (whole piece), drained
2 large tomato slices
1 red chilli, deseeded, thinly sliced
1 garlic clove, finely chopped
1 tsp fresh oregano or ½ tsp dried
a few olives, pitted
1 small onion, sliced
4 tbsp olive oil

Step 1

Heat oven to 200oC/ fan. Place cheese on a double sheet of baking parchment. Cover with tomato. Scatter over chilli, garlic and oregano, olives and onion, then drizzle with olive oil.

Step 2
Scrunch up baking parchment to seal the feta in a parcel, then place on a baking tray and bake for 20 until cheese becomes very tender and melts.
