Ingredients
2/3 cup extra-virgin olive oil
1½ kg beef, medium diced
1 large red onion, finely chopped
3 garlic cloves, finely chopped
1 red chili, finely chopped, seeds removed
250 g walnuts, grated
1 cup dry white wine
200 g Kefalograviera cheese or other hard salty cheese (Romano, aged gruyere etc), diced
salt, pepper
Method
Step 1
Heat oil in a large pan on high heat and sear meat on all sides until nicely browned. Stir in onion, chili and garlic until fragrant. Add wine and when alcohol evaporates turn heat down to low, add 1 cup of hot water or broth and simmer for 1-1½ hour until meat is really tender. Add extra water if necessary. Season with salt and pepper and boil for another 5 mins. Transfer meat on a platter with a slotted spoon. Cover loosely with foil.
Step 2
In the same pot stir in walnuts and cheese in the sauce and simmer for 5 mins. Return meat in the pan and simmer for another 5 mins until sauce thickens. Serve warm with pasta of your choice or chips.
