The perfect meal for all days of the week!
Serves: 5 Prep. time: 15′ Cooks in: 30′ Ready in: 45′
Ingredients:
600 g tagliatelle
500 g squids, thinly sliced
2 medium green peppers, sliced
2 long red peppers, sliced
1 medium onion, finely chopped
1 garlic clove, finely chopped
1½ cup tomato juice
¼ cup ouzo or ½ cup white wine
½ cup extra-virgin olive oil
salt, black pepper
Method
Step 1
In a large non-stick pan, on medium heat, heat oil and cook onion and garlic until softened, for 2-3 minutes. Add peppers and cook for another 2 minutes until tender. In the meantime, in a small non-stick pan, cook squid in 1 tbsp oil on all sides for 2-3 minutes. Transfer on a plate using a slotted spoon.
Step 2
Add ouzo or wine and when alcohol evaporates stir in tomato juice and season with salt and pepper. Cover with lid and simmer for 20 minutes. 1 minute before you remove pan from heat, stir in squids.
Step 3
In the meantime cook pasta according to pack instructions, drain and reserve 1 cup of the boiling liquid.
Step 4
Stir pasta in squid sauce in the pan, adding a little reserved water if necessary and serve immediately.
