Ingredients
3 large leeks
500gr ground beef
⅓ cup rice
1 medium onion, finely chopped
2 bacon strips, finely chopped
300gr tined tomatoes, finely chopped
1 tbsp parsley, finely chopped
2 tbsp tomato paste dissolved in ⅔ cup of water
⅓ cup extra-virgin olive oil
salt, freshly ground black pepper
Method
Step 1
Clean leeks, slice white part into pieces 7-8cm long. Boil in salted water for 4 minutes or until a little tender. Strain. Push with your fingers and separate leeks into tubes of 2 layers each, chopping and leaving remaining leeks for sauce.
Step 2
For the filling: In a non-stick frying pan add chopped bacon and cook until fat is released. Stir in ground beef and onions. Add 4-5 tbsp olive oil and sizzle for several minutes without stirring to give it a chance to brown. Add tomatoes, parsley, rice, salt
