Enjoy this recipe on toast or crackers or as a bruschetta. It is both healthy and yummy!

20 really fresh sardines
4 tbsp semi-coarse sea salt
4 tbsp golden raisins
4 tbsp black raisins
3 tbsp tomato, chopped
2 tbsp parsley, finely chopped
2 tbsp spring onion, finely chopped
½ tbsp spearmint, finely chopped
4 tbsp extra-virgin olive oil
2 pinches lemon zest
salt, black pepper

Step 1
In a large bowl line sardines and sprinkle with salt. Cover with lid and refrigerate for 3 hours. και

Step 2
In a second bowl mix remaining ingredients and refrigerate.

Step 3
Remove heads, guts and the bone of the sardines. Wash with tap water, pat dry with kitchen paper and fill with 1 tbsp of the filling. Serve immediately.
