Serves: 4 Prep. time: 10′ Cooks in: 10′ Ready in: 20′

2 prunes, pitted, sliced
3-4 tbsp salted butter
4 tbsp pistachios
5-6 spring onions, chopped
2 tbsp balsamic vinegar
4 slices whole meal bread, toasted
herb cream cheese
4 slices prosciutto

Step 1
Melt butter in a non-stick frying pan and cook pistachios and spring onions until softened.
Stir in vinegar and cook for a couple of minutes.

Step 2
Spread cream cheese on bread slices and grill until nicely colored. Top with onion mix, prosciutto and prune slices and serve.
