Ingredients
6 eggs
300 g minced beef or pork, cooked
100 g Kefalograviera cheese or white soft cheese
1 tbsp parsley, finely chopped
3 tbsp extra-virgin olive oil

Method
Step 1
Heat oil in a medium non-stick frying pan and line the bottom with minced meat. Cook on medium heat for 3-4 minutes.
Step 2
Whisk eggs with cheese parsley and a little pepper. Pour over minced meat, making holes in the meat to allow the eggs to cook. When omelette is set, cover with lid and turn down heat.
Step 3
When ready, sprinkle with extra parsley and serve warm.
