Fresh tomatoes and feta cheese are an excellent combination for a light meal. Try making this dish more hearty adding some rusks.

Serves: 4 Prep. time: 14′ Cooks in: 1′ Ready in: 15′

4-6 ripe tomatoes, firm
200 g sundried tomatoes,
rusks for serving
1 cup feta cheese, crumbled
½ cup extra-virgin olive oil
1 tsp sugar
2-3 tbsp lemon juice
fresh oregano leaves or thyme
salt, pepper

Step 1
Carve a cross on the bottom of the tomatoes with a sharp knife and blanch in a pan with boiling water for 1 minute. Peel and whizz tomatoes in your blender with sugar, lemon juice, salt and pepper (according to your taste). Sieve and divide in bowls.

Step 2
Sprinkle with sundried tomatoes, feta cheese and accompany with 2-3 rusks. Drizzle with olive oil, sprinkle with oregano leaves and serve.
