Simply delicious and healthy. Try some salad, pita breads or tzatziki on the side. You will love this souvlaki. Your kids will, too!

Serves: 8 Preparation: 20′ + 8h marinating Cooks in: 20′ Ready in: 40′

Ingredients
500 g boneless, skinless turkey breast or thigh, diced
1 green pepper, diced (the size of the meat)
1 yellow pepper, (the size of the meat)
1 zucchini, (the size of the meat)
8 cherry tomatoes, halved
6 white mushrooms, stems removed, cleaned
8 bamboo skewers

For the marinade:
2 tbsp mild mustard
1 tsp rosemary dried, finely chopped
1 tsp oregano dried
4 tbsp extra-virgin olive oil
1 tsp sweet paprika
1 tbsp lemon juice
sea salt, freshly ground black pepper

Method

Step 1
Combine all ingredients for the marinade in a large bowl. Add the turkey and turn to coat. Cover, refrigerate and marinate the turkey, turning occasionally, for 8 hours, or overnight.

Step 2
Soak bamboo skewers in water for at least 15 minutes. Preheat your grill to medium-high. Divide and thread the turkey and veggies on 8 skewers alternating the ingredients. Season the souvlaki with salt. Grill for 20 minutes, turning occasionally, until cooked through.

Step 3
Serve the souvlaki, on pita bread, tzatziki, some salad or even rice.
