We know it’s summer but that big chocolate cookie craving never goes away. Double chocolate plus currants equals an amazing quick dessert for the whole family!

Serves: 10 cookies Prep. time: 10′ + 30′ waiting Cooks in: 10′ Ready in: 20′

110 g good quality butter
150 brown sugar
90 all purpose flour
¼ tsp baking powder
1 egg
15 g cocoa powder
1 pinch of salt
50 g currants
45 g milk chocolate, in small chunks
45 white chocolate, in small chunks

Step 1
Line a shallow baking dish with non-stick baking parchment.

Step 2
In the bowl of your stand mixer beat butter and sugar. Add the egg, flour, baking powder, cocoa and salt and beat until combined. Lastly, add chocolate and currants.

Step 3
Divide dough in 10 balls. Press each ball down to flatten and transfer in the baking dish leaving some space between the cookies. Chill for 30 minutes.

Step 4
Preheat oven at 175oC and bake for about 9-10 minutes (depending on the oven).
