An all-star, easy-to-follow season salad with crunchy cherries! So fresh and delicious…

2 curly green lettuces
1 curly red lettuce
1 small fennel bulb, finely sliced
2-3 spring onions, finely chopped
200gr cherries, pitted, cut in half
120gr goat cheese (chevre)
1/3 cup almonds toasted, chopped

For the vinaigrette
1½ tbsp balsamic vinegar
6 tbsp extra-virgin olive oil
1 tbsp warm water
½ tsp runny honey
1 tsp spearmint finely chopped
Kosher salt, freshly ground black pepper


Step 1
Wash greens thoroughly and drain well. In a large serving bowl combine all greens and cherries, season lightly and toss gently.

Step 2
For the vinaigrette: Whisk all ingredients in a medium bowl until combined. Season with salt and pepper.

Step 3
Drizzle salad with the vinaigrette, toss gently and serve immediately, scattering cheese and almonds on top.
