The perfect brownie for kids who do not like vegetables such as zucchini!

Serves: 1 small-medium baking dish Prep. time: 10′ Cooks in: 30′ Ready in: 40′

160 g flour + a little extra for the tin
50 g cocoa powder
1/2 tsp baking powder
1/4 tsp salt
50 g butter, melted
100 g brown muscovado sugar
100 g granulated sugar
2 eggs, beaten
1 tsp vanilla extract
100 g chocolate drops
1 medium zucchini, grated


Step 1
Preheat oven at 180°C/fan. In a bowl mix flour, cocoa, baking powder and salt with a spatula.

Step 2
In a second bowl mix butter with all sugar and eggs until incorporated.

Step 3
Bring the two mixtures together, add zucchini after squeezing out excess water and chocolate drops. Stir to incorporate.

Step 4
Transfer in a shallow buttered 20 cm square tin, dusted with flour. Bake for 20-30 minutes or until the top has a shiny, papery crust and sides are just beginning to come away from the tin. Serve warm or at room temperature.
