Oh, these amazingly crunchy cookies! They combine sweet raisins and a warm hint of cinnamon and cloves to make irresistible crunchy goodies. They will go down a treat every time!

Ingredients
2 cups extra-virgin olive oil
1½ cup sugar
2 cups fresh orange juice
2 cups black raisins
2 tsp baking soda
2 oranges, zested
1-1½ tbsp cinnamon powder
1 tsp cloves powder
1 tsp baking powder
2 kgr all purpose flour
sesame seeds for sprinkling
Method
Step 1
Preheat oven at 170C and line a shallow baking dish with baking parchment.
Step 2
In a stand mixer attach beater and beat oil and sugar for 6-7 minutes. Then add orange zest.
Step 3
In another bowl mix flour and baking powder, cinnamon and cloves. Dissolve baking soda in orange juice and add to mixer bowl, beating for another minute.
Step 4
Replace the beater with the dough hook and add flour mix in batches alternating with raisins, until well combined.
Step 5
When you get a nice firm dough, divide it in 6 pieces and roll them in a long thin cylinder each. Carve 10 slices on each cylinder dough but not all the way down. Brush with water and sprinkle with sesame seeds.
Step 6
Bake for 25-30 minutes. With a sharp knife cut the slices all the way down. Place the single biscuits on the baking pan and bake for another 10 minutes until nicely colored and very crispy.
