Ingredients
1 glass of water couscous
1 glass of water tahini
6 tbsp sesame seeds, toasted
4 glasses of water vegetable stock
1 lemon, juiced
salt, freshly ground black pepper
Method
Step 1
In a medium pan bring vegetable stock to the boil. Add couscous and cook for 15 minutes until cooked or according to pack instructions.
Step 2
Stir in the tahini and simmer for another 5 minutes. Season with salt and add lemon juice.
Step 3
Divide soup in bowls and sprinkle with toasted sesame seeds and pepper.
