This chicken dish is really something! The combination with olives and feta cheese make it extra yummy!

Serves: 4 Prep. time: 10′ Cooks in: 50′ Ready in: 1 h

1 large chicken (2 kg), in portions
1/2 cup extra-virgin olive oil
2 large onions, finely chopped
2 garlic cloves, sliced
1 tbsp tomato paste
1 tsp sugar
1 tbsp dried oregano
200 g tomato juice
250 ml chicken stock
10-15 mixed olives, pitted
200 g feta cheese, grated
salt, black pepper

Step 1
In a large pot boil heat oil on high heat and cook chicken on all sides until nicely colored. Do that in batches if necessary. Stir in onion and garlic and cook on medium heat for another 2 min until fragrant. Add tomato paste, sugar and oregano, stir and turn heat down to low.

Step 3
Stir in tomato juice and stock, cover with lid and simmer for 40 min. or until sauce thickens and chicken cooks through. Before removing pan from heat stir in olives and feta. Cook until cheese melts. Serve hot.
