600 gr carrots, peeled
120 gr cream cheese
160ml double cream
2 tsp sesame seeds, toasted
2 tsp cumin seeds, grounded in powder
salt, black pepper freshly ground

Step 1
Boil carrots until tender. Drain and cool.

Step 2
In a food processor blitz carrots with cream cheese, ¾ double cream and cumin until smooth. Season with salt and pepper, add rest of double cream and mix again until mixture is smooth, like mousse.

Step 3
Divide mixture in glasses and sprinkle with sesame seeds. Decorate with parmesan chips if you like and serve.
