Enjoy this fritters without guilt. They’re easy to make and so crispy! The whole family is sure to love this treat.

Serves: 6 Prep. time: 30′ Cooks in: 40′ Ready in: 1:10′

1 kg zucchini, grated
3 spring onions, finely chopped
2 garlic cloves, finely chopped
3 eggs
250 g feta cheese, crumbled (or other white semi-hard salty cheese)
3 tbsp fresh spearmint, finely chopped
3 tbsp fresh parsley, finely chopped
3 tbsp fresh dill, finely chopped
1/2 cup, extra-virgin olive oil
200 g flour
salt, pepper

For frying
panko breadcrumbs
vegetable oil or olive oil

Step 1
Drain zucchini in a colander for 30 minutes sprinkling with 1-2 tsp of salt. Squeeze with your hands to fasten procedure.

Step 2
In a bowl mix all ingredients and season with pepper. The mixture will be slightly watery but do not worry.

Step 3
Take a dollop or two of mixture and make fritters. Dust with panko and transfer on a baking dish lined with baking parchment. Bake for 30-40 minutes in a preheated oven at 180°C until golden.
