This easy soup is light, very tasty and makes a difference because it features rocket! Serve with crusty bread.

Serves: 4 Prep. time: 15′ Cooks in: 25′ Ready in: 40′

4 tbsp extra-virgin olive oil
1 onion, finely chopped
1 garlic clove
1 potato, diced
500 g zucchini, diced
1 tsp mixed spices for meat or chicken
1 medium rocket bunch, chopped
500 ml vegetable stock
2 tbsp Graviera cheese, coarsely grated
salt, pepper
yogurt and parsley for serving

Step 1
In a pan heat oil and cook onion, garlic, potato, mixed spices and zucchini on medium heat for 2 minutes. Stir in rocket and stock.

Step 2
Season with salt and pepper and simmer on low heat for 15 minutes or until potato is really tender. Add Graviera cheese and whizz with a stick blender, adding a little hot water too thick.

Step 3
Serve warm with Greek yogurt and some chopped parsley.
