This traditional dish is called “giouvetsi” and it is made with beef (or in some cases with lamb or chicken). Here we’ve decided to make it a with shrimps. It is absolutely juicy and delicious!

Serves: 5 Prep. time: 20′ Cooks in: 50′ Ready in: 1:10′

25 medium shrimps cleaned, head and shells removed (kept aside)
400 g orzo
300 g broccoli, in florets
½ cup extra-virgin olive oil
1 ½ cup white dry wine of good quality
1 large onion, grated
400 g tomatoes, grated
half bunch parsley, finely chopped
salt, pepper

Step 1
In large pan heat 1 tbsp of oil and cook shrimp heads and shells for 3 min. Add 1,5 lt of hot water and boil for 20 min. Drain and reserve the stock.

Step 2
Preheat oven at 200C/fan. In a large and shallow pan add onion and stir until its liquid evaporates. Then add remaining oil and garlic and cook until fragrant. Stir in orzo for 30 sec. and pour in wine. When alcohol evaporates stir in tomato, season with salt and pepper and boil on medium heat for 2 min. Add broccoli florets and 2 cups of stock, stirring at times until it evaporates. Then add another cup of stock and allow it to evaporate. Repeat procedure until broccoli is just tender and orzo is al dente.

Step 3
Stir in parsley and divide in 4 ramekins. Add 5 shrimps in each ramekin, a little stock and bake for 5 minutes until shrimps change color and orzo is cooked and juicy. Serve warm.
