Beautiful salad to serve with your favorite beef or pork dishes!

Serves: 4-5 Preparation time: 20′ Cooks in:Ready in: 20′

4 cups white cabbage, shredded
1 small red cabbage, shredded
1-2 unpeeled Granny Smith apples, quartered, cored, thinly sliced crosswise
½ lemon, juiced
2-3 tbsp pumpkin seeds
2-3 tbsp walnuts, slightly crushed
4 tbsp black raisins
salt, freshly ground black pepper

For the dressing:
5 tbsp extra-virgin olive oil
1½ tbsp apple cider vinegar
1 tbsp brown sugar

Step 1
Toss apples with lemon juice in a large bowl. Toss white and red cabbage with salt and a little lemon juice to wilt.

Step 2
In a serving plate toss white and red cabbage with apples and raisins.

Step 3
Whisk all dressing ingredients in small bowl. Season dressing to taste with salt and pepper. Leave in the fridge for 30 minutes.

Step 4
Serve salad sprinkling with pumpkin seeds and walnuts.
