This is the perfect summer dessert… It’s so cool and delicious you won’t believe it! Use good quality strained yogurt for perfect results.

Ingredients
500 g strained yogurt
400 ml double cream, beaten in yogurt consistency
½ -1 cup icing sugar
1 shot limoncelo
1 lemon, zested
1 sachet gelatin

For serving and decorating
300 g strawberries, halved
icing sugar
1 lemon, zested
a few fresh spearmint leaves

Method
Step 1
In a small saucepan soften gelatin in 1/4 cup cold water. Then simmer on low heat until gelatin dissolves, stirring at all times.

Step 2
Mix yogurt with sugar, limoncelo and lemon zest. Stir in gelatin and beaten double cream until well combined.

Step 3
Transfer in a large glass bowl or glasses and refrigerate for at least 4 hours. Decorate with strawberries and spearmint leaves, sift some icing sugar on top and serve.
