This is a summer super-easy but impressive salad! Fresh and zingy, it makes a brilliant vegetarian dish.

Serves: 4 Prep. time: 20′ Cooks in:Ready in: 20′

1 kg watermelon, flesh diced, seeds removed
15 cherry tomatoes, peel removed
1 cucumber, seedless, sliced
200 g anthotyro cheese (or other fresh cheese), or feta cheese, diced
1 white onion, thinly sliced
1 lime or lemon, juiced
15 black Kalamata olives, pitted
1/3 bunch spearmint, leaves picked
5-6 mini carob rusks

For the spearmint dressing
1/3 cup extra-virgin olive oil
2 tbsp spearmint, leaves finely chopped
1 lime, zested and juiced
salt, pepper

Step 1
In a bowl season onion with salt and drizzle with lemon juice and zest. Allow to marinate.

Step 2
Spearmint dressing: Whizz all ingredients with salt and pepper until smooth.

Step 3
Ina serving bowl mix all salad ingredients with onion and drizzle with dressing. Serve immediately.
