A quick, comfort-food salad with juicy autumn vegetables, topped with nuts and a simple vinaigrette… Perfect for every occasion!

1 turnip, peeled, grated
2 carrots, peeled, grated
1 beetroot, peeled, grated
1 apple, peel on, no core, in cubes
½ cup parsley, finely chopped
1 tbsp golden seedless raisins
1 tbsp sesame seeds
1 lemon, zested
2 tbsp walnuts, slightly crushed

For the vinaigrette
50ml extra-virgin olive oil
1 lemon, juiced
1 tbsp balsamic vinegar
1 tbsp mustard
1 tsp runny honey

Step 1
In a large serving bowl mix all grated vegetables, season with a little salt and add parsley, apples cubes, lemon zest and sesame seeds. Toss.

Step 2
Mix well all vinaigrette ingredients and drizzle the salad.

Step 3
Serve right away sprinkling with raisins and walnuts.
