Marinate your favorite seafood and serve it in a loaf of bread and you will have created perfection! What a delicious dish…
Serves: 6-8 Prep. time: 40′ Cooks in: 1:10′ Ready in: 1:50′
Ingredients
500 g squids, cleaned, prepared
1 kg octopus, cleaned, prepared
1/5 cup red wine vinegar
1 large cuttlefish, cleaned, prepared, cut
500 g mussels, only the inside
10 shrimps
10 crawfish
1 cup dill, finely chopped
1 large onion, quartered
4 garlic cloves, finely chopped
1 cup extra-virgin olive oil
1 round loaf of bread (2 kg)
For the sauce
1 cup extra-virgin olive oil
1 lemon, juiced
1 tbsp soya sauce
1 tbsp red wine vinegar
1 tsp oregano
1 carrot, grated
a little salt
Method
Step 1
In a large pan with heavy bottom put squids and octopus with one glass of water and vinegar and simmer for 1 hour on low heat until tender. Wrap cuttlefish in aluminium foil and bake in a preheated oven for 1 hour until tender. Blanch the inner part of the mussels in boiling water for 10 minutes. In a pan boil shrimps and crawfish for 2-3 minutes. Discard shrimp and crawfish shells.
Step 2
Chop all seafood in small pieces and put in a bowl. In your blender whizz onion and garlic, dill and olive oil, stir in with seafood and leave to marinate.
Step 3
For the sauce: In your multi or blender whizz all ingredients until you get a smooth sauce.
Step 4
For the bread: With a serrated knife cut a thin horizontal “cap” and remove the inside part with a smaller knife so as to look like a serving bowl. Toast in the oven at 180οC/fan for 5-10 minutes.
Step 5
Transfer seafood inside the toasted bread. Serve the loaf on the table with the prepared sauce on the side.
