Pork tenderloin rubbed with spices and served with homemade smooth apple sauce. That’s a lot of goodness and one of the easiest things you’ll make this week! It’s healthy, high in protein and gluten-free! And did we mention it is budget friendly?

Ingredients
800 g pork tenderloin, thinly sliced (1 cm thick)
1 pinch of nutmeg
1 pinch of clove
1 tsp sweet paprika
1 tsp ginger, powder
extra-virgin olive oil
1 onion, finely chopped
500 ml dry white wine
1 cinnamon stick
salt, pepper
For the apple sauce
4 green apples, cored, peeled, diced,
½ lemon, juiced
2 tbsp butter
4 tbsp grape molasses
salt, pepper
Method
Step 1
For the pork tenderloin: Put meat in a bowl and season with nutmeg, clove, paprika and ginger. In a large non-stick frying pan heat 2 tbsp oil and cook meat in batches on both sides for 2-3 minutes until nicely colored. For each new batch heat 2 tbsp oil. Transfer on a platter and keep warm.
Step 2
In a large pan heat 3 tbsp oil and cook onion for 2 minutes. Stir in wine, add cinnamon stick and season with salt and pepper. Cook on high heat for 10-15 minutes until sauce thickens. The last 5 minutes transfer meat in the pan and move pan around so as meat is covered with sauce. When sauce thickens, remove pan from heat.
Step 3
For the apple sauce: Prepare apples and transfer in a bowl. Drizzle with lemon juice. In a non-stick frying pan heat butter. When it melts cook apples on high heat until tender. Season with salt and pepper and drizzle with grape molasses. Cook for 2 minutes and allow to caramelize. Remove pan from heat and transfer all pan ingredients in your blender. Whizz until you get a smooth, thick sauce.
Step 3
Divide meat on warm plates and drizzle with sauce. Serve with steamed rice if you wish.
