A quick, healthy kid-friendly salad or main dish that will satisfy everyone with its flavor!

Serves: 2-3 Prep. time: 10′ Cooks in: 60′ Ready in: 1:10′

250 g black-eyed peas
1/2 yellow pepper
1/2 orange pepper
1 corn on the cob, boiled, cut off the cob
1 medium red onion, finely chopped
1/2 tsp Dijon mustard
1 tbsp red wine vinegar
1 tsp sugar
1/3 cup light extra-virgin olive oil
salt, pepper

Step 1
In a large pot with lid boil 2 lt of water and stir in beans. Season with a little salt, cover with lid and cook until tender. Season with salt during cooking. Drain.

Step 2
Dice peppers and onion and transfer in a bowl with drained beans and corn.

Step 3
In a bowl beat mustard with vinegar and sugar until well combined. Drizzle salad with dressing, toss well and serve warm.
