A colourful, easy-to-make and tasty, healthy salad. What’s not to like?

Serves: 4-6 Prep. time: 15′ Cooks in: 40′ Ready in: 55′

250 g mung beans, washed, drained
3 tbsp extra-virgin olive oil
200 ham, sliced
1 orange peeled, sliced (white membranes removed)
1 large onion, thinly sliced
½ bunch spearmint, finely chopped

For the vinaigrette
50 ml extra-virgin olive oil
50 ml fresh orange juice
1 tbsp grape molasses
1 garlic clove, crushed
salt, pepper

Step 1
Boil mung beans for 40 minutes until just tender.

Step 2
In a non-stick frying pan heat oil on medium heat and cook ham until nicely colored. Drain on kitchen paper.

Step 2
In a serving bowl toss drained mung beans with all salad ingredients and drizzle with vinaigrette (whizz all ingredients until smooth). Toss again and serve.
