An easy fresh, rich salad that you’ll crave all year long. Add some toasted pine nuts or other nuts of your choice or maybe some raisins, to give a touch of sweetness. Serve with crunchy bread.

Serves: 3-4 Prep. time: 20′ Cooks in:Ready in: 20′

1 red lola rosa, chopped
1 bunch rocket, chopped
15 spinach leaves, chopped
3 lettuce leaves, chopped
10 chicory leaves, chopped
4 spring onions, chopped
1 cup cabbage, grated
3 carrots, grated
20 cucumber slices
10 radishes, sliced
1 red pepper, chopped
½ green pepper, chopped
15 cherry tomatoes, halved
3 celery sprigs, chopped
2 tbsp dill, finely chopped
2 tbsp parsley, finely chopped
salt, pepper

For the dressing
1 lemon, zested + juiced
100 g Greek strained yogurt
150 g mayonnaise
1 tbsp mustard
1 tbsp capers, finely chopped

Step 1
In a bowl stir all dressing ingredients and refrigerate until needed. Add a little water if too thick.

Step 2
In a large serving bowl mix all salad ingredients, garnishing with sherry tomatoes and radishes on top.

Step 3
Drizzle salad with dressing and serve.
