Delicious and cool salad which combines juicy tomatos with sweet red peppers and strawbwrries.

Serves: 4 Prep. time: 30′ Cooks in:Ready in: 30′

5 ripe tomatoes
4 long sweet red peppers
15 ripe strawberries, halved
2 green peppers, diced
20 leaves fresh basil
2 tbsp sumac
1 large Lebanese flat bread, toasted until crispy
4 tbsp red wine vinegar
1 tsp honey
extra-virgin olive oil

Step 1
In a large pan with boiling water blanch tomatoes for 3 minutes and red peppers for
at least 10. Allow to cook and remove peel easily. Cut tomatoes and peppers in pieces and transfer in a serving bowl.

Step 2
Add strawberries and green pepper. Whizz sumac with vinegar, one large pinch of salt, honey and 5-6 tbsp olive oil and drizzle salad. Sprinkle with basil leaves.

Step 3
Break flat bread in pieces and place among salad ingredients and serve immediately.
