Fresh, fruity and light! This autumn salad is really yummy…

Serves: 2-3 Preparation time: 20′ Cooks in: 3′ Ready in: 23′

500g baby spinach, washed, dry
2 red apples, washed, in thin wedges, drizzled with ½ lemon, juiced
150g smoked cheese, cut in 2-3 slices
2 radishes, cut in thin slices
1 handful walnuts
salt, freshly ground black pepper

For the dressing:
2 tbsp apple vinegar
1 tsp runny honey
5 tbsp extra-virgin olive oil
1 tbsp green pepper
salt, freshly ground black pepper


Step 1
For the dressing: In a bowl mix very well all ingredients. Set aside.

Step 2
Heat a grill pan and cook cheese until nicely colored for 2-3 minutes on each side. Dice cheese on a plate.

Step 3
In a serving bowl toss spinach and radish, season with salt and pepper and drizzle with half dressing. Top with apples, walnuts, cheese, drizzle with remaining dressing and serve.
