Simple, juicy, irresistible!

Ingredients
4 burger buns, lightly toasted and warm
2 slices of really stale bread, diced
8 slices of graviera or gouda cheese (2 for each burger)
2 pickled cucumber, chopped
500 g beef mince
2 tbsp extra-virgin olive oil
1 small onion, sliced
1 small bunch parsley, leaves chopped
lettuce leaves
mustard
mayonnaise
ketchup
salt, freshly ground black pepper
Method
Step 1
Heat oil in a non-stick frying pan on high heat and fry onion for 1-2 minutes.
Step 2
Pulse stale bread with parsley in a food processor until grated. Transfer in a bowl, add minced beef, fried onion and the oil from the pan, pickled cucumber and season with salt and pepper. Mix well adding a little cold water until ingredients combine well. Shape 4 burger patties.
Step 3
Grill burger patties on one side for 4-5 minutes. Turn patties and grill for another 4-5 minutes. Top each burger patty with 2 slices of cheese. Grill until cheese melts nicely.
Step 4
Brush all buns with mayonnaise, ketchup or mustard and fill with patties, lettuce leaves, tomato if you want, and serve with French fries if you like.
