Simple salad, no complications, great flavor!

Serves: 4 Preparation time: 15′ Cooks in: 5′ Ready in: 20′

Ingredients
2 bunches baby rocket
20 cherry tomatoes
2 pears, skin removed, cut in slices
2 tbsp sesame seeds, toasted
¼ cup red wine vinegar
1 tbsp honey
300 gr. endive
1 cup dill, finely chopped
3 spring onions, chopped
extra virgin olive oil
salt

Method
Step 1
In a pot with boiling water blanch cherry tomatoes for 2 minutes. Drain and peel off easily. Let cool.

Step 2
Wash rocket and endive thoroughly. Dry on kitchen towel. Chop with hands in a large serving bowl. Add spring onions and dill. Toss well. Add cherry tomatoes, season with salt and toss again. Scatter pear slices on top.

Step 3
For the dressing: In a saucepan heat vinegar with honey stirring until combined. Pour in a bowl, add olive oil and stir with a fork.

Step 4
Drizzle your salad with the dressing, sprinkle with sesame seeds and serve.
